Steps
- In a large pot, heat a splash of olive oil over medium heat. Add the chopped onion, garlic, and bell pepper, and sauté until soft.
- Add the beef and pork to the pot and brown the meat on all sides.
- Stir in the diced cured ham and chorizo, and continue cooking for another 5 minutes.
- Add the soaked chickpeas, carrots, potatoes, paprika, salt, pepper, and water to the pot. Bring to a boil.
- Once boiling, reduce the heat to low, cover, and let simmer for about 2 hours, or until the meats and chickpeas are tender.
- Check occasionally, adding more water if necessary to keep a soupy consistency.
