  1. In a large pot, heat a splash of olive oil over medium heat. Add the chopped onion, garlic, and bell pepper, and sauté until soft.
  2. Add the beef and pork to the pot and brown the meat on all sides.
  3. Stir in the diced cured ham and chorizo, and continue cooking for another 5 minutes.
  4. Add the soaked chickpeas, carrots, potatoes, paprika, salt, pepper, and water to the pot. Bring to a boil.
  5. Once boiling, reduce the heat to low, cover, and let simmer for about 2 hours, or until the meats and chickpeas are tender.
  6. Check occasionally, adding more water if necessary to keep a soupy consistency.
  7. Once cooked, taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley.
