- In a small bowl, combine the saffron with 1/4 cup of hot water and let it steep.
- Heat olive oil in a large paella pan or wide skillet over medium heat. Add the chorizo and sauté until browned.
- Add the chopped onion, garlic, and red bell pepper, cooking until softened.
- Stir in the diced tomatoes, smoked paprika, salt, and pepper, and cook for another 2-3 minutes.
- Add the Bomba rice and stir well to coat the grains.
- Pour in the chicken broth and saffron mixture, stirring to combine. Bring to a boil.
- Reduce the heat to low and let it simmer for about 15 minutes, without stirring.
- Add the shrimp and mussels, tucking them into the rice. Sprinkle the green peas on top.
- Cover and cook for an additional 10 minutes until the seafood is cooked and the rice is tender.
- Remove from heat and let it sit for 5 minutes before serving.
- Garnish with fresh parsley and serve with lemon wedges.
