Steps
- In a large pot, combine soaked chickpeas, beef shank, pork belly, and chorizo.
- Cover with water and bring to a boil. Skim off any foam that rises to the top.
- Add the onion, carrot, and garlic to the pot along with the bay leaf, salt, and pepper.
- Reduce heat and simmer for about 1 hour.
- Add the cabbage and potatoes to the pot and continue to cook for an additional 30-45 minutes, or until all ingredients are tender.
- Taste and adjust seasoning as needed. Serve hot with the broth.
