Steps
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion and bell pepper, sautéing until soft.
- Stir in the minced garlic and cook for an additional minute.
- Add the chopped tomatoes, cumin, paprika, salt, and black pepper. Cook for 5 minutes.
- Place the beef brisket into the pot and pour in the beef broth.
- Add the bay leaf, bring the mixture to a boil, then reduce the heat to low.
- Cover and simmer for about 2.5 to 3 hours, or until the beef is tender and easily shreds.
- Remove the beef from the pot, shred it using two forks, and return it to the pot to mix with the sauce.
- Serve hot, either alone or in sandwiches.
